The Galangal plant is a herb with attractive flowers and vegetation. The galangal plant is commonly found in Malaysia and Indonesia as well as in the southern parts of India. The green rhizomes of the galangal plant contain the essential oil that consists of methyl cinnamate and cineol. These two give a spicy taste, like a mixture of ginger and pepper.

The tiny flowers of the plant are greenish-white along with a dark-red veined tip. The rhizomes have a sweet, ginger-like flavor, but they are more peppery with a pine aroma. These rhizomes are often pale yellow to white. However, some of them have blue-tinged, giving it another name of blue ginger. When you dry this blue ginger, they have a light brown color.
